Jonathan St. Hilaire
With more than 30 years of experience in the restaurant industry, Jonathan St. Hilaire brings a diverse background and range of culinary techniques to Colletta, where he currently serves as both executive and pastry chef – rounding out each guest’s meal with a memorable experience.
Prior to graduating from the French Culinary Institute, St. Hilaire began working in the restaurant industry because of a lost bet to his father – at just 14 years old. He quickly learned to love the multifaceted industry for both its culinary and business aspects, and eventually spent years working across the Eastern shore, from New York to Georgia, specializing in both traditional dining and dessert. St. Hilaire most recently served as pastry chef for Concentrics Restaurants – a restaurant group comprised of nine dining experiences – and owned and operated two bakeries beforehand.
St. Hilaire currently lives in Roswell with his wife, Kristen, and twins, Jack and Parker. When he isn’t in the kitchen, St. Hilaire enjoys spending his time outdoors, fly fishing and overlanding.
